- 2 teaspoons oil
- 1 package (14 ounces) McCormick® Grill Mates® Mesquite Smoked Sausage, cut into 1-inch slices
- 1 medium green bell pepper, chopped
- 1 medium onion, chopped

- (15 1/2 ounces) red kidney beans, drained and rinsed
- 1 can (14 1/2 ounces) diced tomatoes , undrained
- 1 can (8 ounces) tomato sauce
- 1 package (8 1/2 ounces) corn muffin mix
- 1 package (8 ounces) shredded Mexican cheese blend, (2 cups), divided
INSTRUCTIONS
- 1 Heat oil in large skillet on medium-high heat. Add sausage, bell pepper and onion; cook and stir 5 minutes. Stir in beans, tomatoes and tomato sauce. Bring to boil on medium heat. Remove from heat. Stir in 1 cup of the cheese. Set aside.
- 2 Prepare corn muffin mix as directed on package. Drop small spoonfuls of batter over sausage mixture. Cover.
- 3 Cook on medium-low heat 15 minutes or until corn bread is cooked through. Sprinkle with remaining 1 cup cheese. Cover. Cook on low heat until cheese is melted.
