- Caribbean Rice
- 1 package Zatarain's® Caribbean Rice Mix
- Jerk Chicken
- 2 tablespoons olive oil, divided
- 1 pound boneless skinless chicken thighs
- 1 tablespoon McCormick® A Hint of Sea Salt Caribbean Jerk Chicken Seasoning
- Green Beans and Mushrooms
- 2 teaspoons olive oil
- 1 package (8 ounces) sliced mushrooms
- 1 pound fresh green beans, trimmed
- 1 teaspoon McCormick® A Hint of Sea Salt Caribbean Jerk Chicken Seasoning
INSTRUCTIONS
- 1 For the Rice, prepare Rice Mix according to package directions.
- 2 Meanwhile, for the Chicken, brush chicken with 1 tablespoon of the olive oil. Sprinkle evenly with 1 tablespoon of the Seasoning. Cover and refrigerate until ready to cook.
- 3 For the Green Beans and Mushrooms, heat 2 teaspoons oil in large nonstick skillet on medium heat. Add mushrooms; cook and stir 2 minutes. Add green beans; cook and stir 10 minutes or until tender-crisp. Sprinkle with 1 teaspoon Seasoning.
- 4 Heat remaining 1 tablespoon oil in cast iron skillet on medium heat. Add seasoned chicken; cook 3 to 5 minutes per side or until chicken is cooked through. Serve chicken with rice and vegetables.
