Ingredients
- 2 tablespoons vegetable oil, divided
- 1 pound medium shrimp, peeled and deveined
- 1 teaspoon Zatarain's® New Orleans Style Creole Seasoning
- 1 medium yellow or red onion, chopped

INSTRUCTIONS
- 1 Heat 1 tablespoon of the oil in large heavy skillet on medium–high heat. Add shrimp and Seasoning; cook and stir 3 minutes or until shrimp turn pink. Remove from skillet. Set aside.
- 2 Heat remaining oil in same skillet. Add vegetables; cook and stir 2 minutes. Stir water and Rice Mix into skillet. Bring to boil. Reduce heat to low; cover and simmer 25 minutes.
- 3 Stir in shrimp. Cover and cook 5 minutes longer or until rice is tender. Remove from heat. Let stand 5 minutes. Fluff rice with fork before serving.
