A make-ahead dish that suits any crowd or type of gathering

Whether your holiday brunch is served at the dining table with the nice china and flutes of Champagne or eaten on paper plates in the living room as everyone opens presents, you’ll want a delicious, comforting dish that can feed a crowd – like our Cheesy Sausage and Croissant Casserole.

Why We Love Cheesy Sausage and Croissant Casserole

  • Simple ingredient list. This recipe is more special than your average breakfast casserole, but it doesn’t require any hard-to-find ingredients or intensive prep work – the dish comes together in four easy steps.
  • Easy to prepare. Buttery croissants from the bakery section of the supermarket and nutty Gruyere cheese are the key to this casserole and make it feel a bit fancier than the usual bread cubes or hash browns.
  • Customizable. Although the recipe calls for mini croissants, if you can’t find them, you can use about 12 regular-sized croissants (they’re all torn up, anyway). Likewise, Cheddar is a good stand-in for the Gruyere, if you prefer. Best of all, it's make ahead: The dish needs to be assembled the night before, so all you have to do is pop it in the oven on Christmas morning.

How To Make It Your Own

  • Sausage substitutions. Not a fan of hot sausage? Swap it out for mild Italian sausage, or breakfast sausage. Or eliminate the meat completely by replacing it with plant-based sausage, or sauteed sliced mushrooms, onions, and bell peppers.
  • Cheese swaps. As noted above, you can change up the cheese as well, as long as you have one that is melty, and one that is hard and salty. Cheddar, fontina, and Swiss are all good stand-ins for the Gruyere, and a grated Italian cheese blend or grated Asiago can replace the Parmesan.

What Commenters Are Saying

Not only is this recipe an editor favorite, readers love it too, saying:

  • “We have been making this for years for family get-togethers and now we're not allowed to make anything else! We make it as directed in the recipe and it's perfect.”
  • “This was the perfect brunch dish loved by all and it looks as pretty as the magazine photo!"
  • “This is one of my all-time favorite breakfast casserole recipes! The Gruyère makes it feel a little fancier than most breakfast casserole recipes, and the filling is so creamy and delicious. It's always a win for family gatherings and lake or beach weekends.”
