Introducing Salsa-fied Chicken, Our New Favorite 15-Minute Dinner

Some nights, we’re prepared to spend 40 minutes breading and baking chicken tenders. And then there are most nights, when we feel like falling face-first onto the sofa and ordering pizza. Enter option C: Salsa-fied Chicken, the best of both worlds. It’s cheesy. It’s saucy (thanks to an entire jar of salsa). It’s hearty. It takes less than 15 minutes to make and costs just a couple bucks a serving. Oh yeah, and it and it gets only one skillet dirty.

What you need: 1 pound boneless, skinless chicken breast, 1 jar of salsa (or salsa verde), 1 ½ cups chicken broth, 2 cups instant rice and ½ cup shredded cheese. Plus olive oil, salt and pepper to taste. Optional: fun toppings like chopped avocado, olives or basil (use your imagination).

What you do: Slice the chicken, season it and sauté it in a hot skillet coated with olive oil until it’s cooked through. Add the salsa and chicken broth and bring to a boil. Turn off the heat, stir in the instant rice and sprinkle cheese over everything. Cover until the rice is tender (no more than 5 minutes). And just like that, dinner’s done.
