Not-so-secret fact: We’re suckers for pizza. And we’re willing to try almost any variation. Watermelon pizza? We’re in. Cauliflower crust? Let’s do this. Mini eggplant pizzas? Um, yes.
So we’d like to introduce you to our newest obsession, savory pumpkin pizza. And thanks to Love Lola, we now know how to make it in half an hour.
Step 1: Preheat the oven to 350 degrees. Start with our cheater’s pizza dough (shh…we won’t tell anyone). Shape the dough in a flat, round disc on a large baking sheet or pizza stone.
Step 2: Make the pumpkin sauce mixture. Sauté one diced sweet onion and 1 teaspoon sugar in a saucepan. Add it to a mixing bowl with 1 can pumpkin puree, ¼ teaspoon ground nutmeg, 1 diced shallot, ½ cup Parmesan cheese, 2 teaspoons thyme and salt and pepper. Mix until smooth, then spread the pumpkin mixture onto the pizza dough.
Step 3: Now comes the fun part. Top the pizza with your favorite ingredients. We’re partial to pistachios and cranberries, or Havarti and zucchini.
Step 4: Cook the pizza for 10 to 15 minutes, then carefully remove it from the oven. Voilà! The perfect fall dinner is served.
