You Need to Try Keto Butter Burgers (and Here’s How to Make Them at Home)

Type “butter burger” into Google and most results will tell you it’s a decadent Wisconsin specialty. Essentially, a burger cooked in butter. Y-U-M. But we’re not here to talk about burgers that are merely cooked with butter; we’re going to discuss burgers that are made with butter. (Yep. We’re going there.)

The technique involves incorporating cold grated butter to your burger patties for mega juiciness. When we first read about this method on The Kitchn, we realized that it was every keto dieter’s dream. Meat plus even more fat equals….satisfying diet food? (Or keto diet food, anyway.)

Making them is pretty darn easy…and the results are unbelievable. Think juicy, flavorful patties with a crisp, crackly crust. Here’s how to make them.

What you need: 2 sticks of cold unsalted butter, 3 pounds of ground beef (like sirloin) and salt and pepper.

Step 1: Grate the butter. Using the large holes on a box grater, quickly grate the sticks into long, thin pieces. You’re aiming for pieces the same size and shape as the ground meat itself.

Step 2: Carefully form the patties. Working with your hands, gently and quickly fold the butter into the ground meat and shape into patties. Season with salt and pepper and proceed to cook them as you normally would—in a skillet or on the grill. Don’t worry if there are a few flare-ups, you’re working with much more fat than usual so they’re bound to happen. Cut them down by wiping out your skillet between batches, and there’s no need to add any extra oil while you’re cooking. 

Step 4: Go wild with toppings. Avocado? Double cheese? Bacon? They’re all keto-approved, folks.
