Ingredients
- 8 slices Ultimate Bacon
- 3 cups frozen diced potatoes, thawed
- 2 teaspoons McCormick® Grill Mates® Montreal Steak Seasoning
- 1 medium onion, chopped
- 1 small red bell pepper, chopped
- 12 eggs
- 1 cup milk
- 2 cups shredded Cheddar cheese, divided
- 2 tablespoons thinly sliced green onion
INSTRUCTIONS
- 1 Preheat oven to 350°F. Cook bacon in large skillet on medium heat until crispy, about 5 to 7 minutes. Remove bacon from skillet and drain on paper towels; roughly chop and set aside.
- 2 Add potatoes and Seasoning to skillet; cook and stir 2 to 3 minutes. Add onion and pepper; cook 3 to 4 minutes or until softened. Remove mixture from skillet. Set aside.
- 3 Beat eggs and milk in large bowl until well blended. Stir in cooked vegetable mixture, 1 1/2 cups of the shredded cheese and half of the bacon. Pour into greased 13x9-inch baking dish.
- 4 Bake 15 minutes. Carefully remove dish from oven and sprinkle with remaining cheese, bacon and green onion. Return dish to oven and bake 5 to 10 minutes longer or until center is set and top is golden brown. Remove from oven. Let stand 10 minutes before serving.
