Ingredients
- 1 1/2 pounds boneless skinless chicken breasts
- 1 cup Lawry's® Signature Italian with Garlic, Onion & Herbs Marinade, divided
- 1 medium red bell pepper, seeded and quartered
- 1 medium yellow bell pepper, seeded and quartered
- 1 small eggplant, sliced lengthwise into 1/2-inch thick slices
- 1 medium zucchini, sliced lengthwise into 1/2-inch thick slices
INSTRUCTIONS
- 1 Place chicken in large resealable plastic bag or glass dish. Add 1/2 cup of the marinade; turn to coat well.
- 2 Refrigerate 30 minutes or longer for extra flavor. Remove chicken from marinade. Discard any remaining marinade.
- 3 Grill chicken over medium heat 6 to 7 minutes per side or until cooked through, brushing with 2 tablespoons of the remaining marinade halfway through cooking. Grill vegetables over medium heat 2 to 4 minutes per side or until tender-crisp, brushing occasionally with remaining marinade.
