Ingredients
- 3 pounds boneless pork butt, trimmed (shoulder roast)
- 3/4 cup plus 1 tablespoon Chipotle Molasses, divided
INSTRUCTIONS
- 1 Place pork in 6-quart slow cooker. Pour 3/4 cup of the marinade over pork; turn to coat. Cover.
- 2 Cook 4 to 5 hours on HIGH or 8 hours on LOW or until meat is fork tender. Remove pork from slow cooker and place in large bowl, reserving cooking liquid in slow cooker.
- 3 Shred pork using 2 forks. Mix 1/2 cup reserved cooking liquid and remaining 1 tablespoon marinade in small bowl. Pour over shredded pork; toss gently to coat. Serve on sandwich or slider rolls, or use for tacos.
