Ingredients
- 1 pound (about 5 to 7) plum tomatoes, cut into 1/2-inch cubes
- 2 tablespoons oil
- 1 teaspoon McCormick® Minced Garlic
- 1/2 teaspoon McCormick® Oregano Leaves
- 1/4 teaspoon McCormick® Basil Leaves
- 1 tablespoon fresh lemon juice
- 3/4 cup coarsely chopped smoked salmon
- 1 package (8 ounces) whipped cream cheese
- 1/2 cup mayonnaise
- 2 tablespoons thinly sliced fresh basil
INSTRUCTIONS
- 1 Preheat oven to 425°F. Mix tomatoes, oil and Seasonings in large bowl. Place in single layer on large, shallow, foil-lined baking pan.
- 2 Roast 25 minutes or until tomatoes are soft and browned on top. Let cool.
- 3 Mix cooled tomatoes and lemon juice in large bowl. Add salmon, cream cheese and mayonnaise; gently stir until well blended. Garnish with basil. Serve with sliced baguette or crackers. (Makes 3 cups)
