- 1/2 cup short-grain rice
- 2 cups water
- 3 1/2 cups whole milk
- 2 cups Thai Kitchen® Unsweetened Coconut Milk
- 1/2 cup sugar

INSTRUCTIONS
- 1 Place rice in fine mesh sieve. Rinse under cold water until water runs clear. Transfer to small bowl. Add cold water to cover. Let stand 2 hours. Drain well.
- 2 Bring 2 cups water to boil in medium saucepan. Add rice. Reduce heat to low; cook, stirring occasionally, until water is completely absorbed, about 25 minutes. Remove from heat. Cool rice completely.
- 3 Transfer cooled rice to blender container. Add milk, coconut milk, sugar and seeds from scraped vanilla bean. Blend on high speed until smooth. Strain mixture through cheesecloth and discard any remaining solids. Refrigerate at least 1 hour or until ready to serve. Serve over ice in tall beverage glasses.
