Ingredients
- 1 1/2 cups cottage cheese
- 2 eggs
- 1 teaspoon McCormick® All Natural Pure Vanilla Extract
- 1 cup sifted flour
- 1/4 cup sugar
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons McCormick® Ground Cinnamon
INSTRUCTIONS
- 1 Combine cottage cheese and eggs in blender, blend until smooth. Add vanilla to blender and quickly blend until incorporated.
- 2 Combine flour, sugar, baking powder and cinnamon in a bowl and stir to combine. Add cottage cheese mixture to flour mixture and stir together until just combined. Set aside.
- 3 Heat a large nonstick pan on medium-low heat for 5 minutes. Heat oil in pan until shimmering. Using paper towels, wipe out oil leaving a thin film on bottom and sides. Add batter to pan in 1/4 cupful, gently spreading out if needed. Cook until top forms small bubbles, then flip and cook until lightly browned on the bottom. Repeat with remaining batter, keeping finished pancakes in a warm oven until ready to serve.
