Ingredients
- 3/4 cup water, divided
- 3 packets unflavored gelatin
- 2/3 cup light corn syrup
- 2 cups sugar
- 1 tablespoon plus 2 teaspoons McCormick® All Natural Pure Vanilla Extract
- 2 cups confectioners' sugar, divided
- 1 tablespoon plus 1 teaspoon McCormick® Ground Cinnamon, divided
- 1/4 cup butter
- 1/4 cup heavy cream
- 2 bars chocolate
- Homemade graham crackers
INSTRUCTIONS
- 1 Start by making homemade marshmallows by adding 1/2 a cup of water and gelatin packets to a large mixing bowl. Stir until combined; let mixture sit for 10 minutes to set gelatin.
- 2 In a saucepot over medium heat, add remaining water, corn syrup and sugar. Stir occasionally until mixture comes to a boil; cook for an additional 2 minutes.
- 3 Carefully pour your hot sugar mixture over your gelatin and water; use a hand or stand mixer to beat for 5 minutes. Add 1 tablespoon of vanilla extract; keep beating to an additional 5 minutes or until stiff peaks form.
- 4 Spray an 8x8 baking dish with cooking spray, then gently dust the pan with 1/2 cup powdered sugar and 1 tablespoon of McCormick Ground Cinnamon. Pour whipped marshmallow fluff into the pan and cover with plastic wrap.
- 5 In the meantime, make a homemade cinnamon icing with butter, 1 1/2 cups powdered sugar, 2 teaspoons McCormick® Pure Vanilla Extract, heavy cream and 1 teaspoon McCormick® Ground Cinnamon. Mix until completely combined.
- 6 After 12 hours, gently take out the marshmallow and cut it into pieces.
- 7 Roast marshmallow and assemble your s’more with your homemade graham crackers, chocolate, marshmallows, cinnamon icing and top graham cracker.
