Watergate Salad (Pistachio Pineapple Fluff)

Ingredients

  • 2 cups cold heavy cream
  • 1/4 cup confectioners' sugar
  • 1 1/2 teaspoons McCormick® All Natural Pure Vanilla Extract
  • 1 can (20 ounces) crushed pineapple in juice (undrained)
  • 1 package (3.4 ounces) instant pistachio pudding mix
  • 1 1/2 cups miniature marshmallows
  • 3/4 cup unsalted pistachios, pecans or walnuts, chopped, divided
  • Maraschino cherries, to garnish

INSTRUCTIONS

  • 1 Beat heavy cream, confectioner’s sugar and vanilla in large bowl with electric mixer on medium speed until stiff peaks form, about 6 to 8 minutes. Set aside.
  • 2 Mix crushed pineapple (including juice from can) and pudding mix in large bowl until well blended. Stir in marshmallows and 1/2 cup of the chopped nuts.
  • 3 Gently fold in whipped cream, mixing just until blended. Cover and refrigerate 1 hour or until ready to serve. Transfer to serving bowl and sprinkle with remaining nuts and top with maraschino cherries to serve. Store any remaining salad in an airtight container up to 3 days.

    Test Kitchen Tip: Swap in 2 containers of frozen whipped topping, thawed, in place of the homemade whipped cream (omitting heavy cream and confectioners’ sugar). Simply prepare as directed, folding in the whipped topping and vanilla in step 3.
