Ingredients
- 2 tablespoons oil
- 2 cups corn
- 1 package McCormick® Mexican Style Street Corn Taco Seasoning Mix, divided
- 1/4 cup mayonnaise
- Crumbled queso fresco cheese
- Chopped fresh cilantro
- 2 NY strip steaks, (about 1 pound) cut into very thin strips
- 1/4 cup water
- White corn tortillas, warmed
INSTRUCTIONS
- 1 Heat 1 tablespoon of the oil in large skillet over medium-high heat. Add corn; cook and stir until heated through. Stir in 1 tablespoon of the Street Corn Taco Seasoning Mix.
- 2 Remove corn from the skillet and place in medium bowl. Add mayo, a handful of queso fresco, and some chopped cilantro. Mix well and set aside.
- 3 Heat remaining 1 tablespoon of oil in skillet. Add steak and remaining Seasoning Mix. Mix well and stir in water. Cook and stir until desired doneness.
- 4 To serve, spoon steak into warmed tortillas. Top with corn, queso fresco and cilantro. Serve with your favorite taco toppings.
