Ingredients
- 1/4 cup agave nectar
- 3 tablespoons olive oil
- 2 tablespoons vietnamese x cajun seasoning
- 1/2 pound (8 ounces) whole grain buckwheat
- 1/2 pound (8 ounces) raw pepitas
- 1/2 pound (8 ounces) raw cashews, coarsely chopped
INSTRUCTIONS
- 1 Preheat oven to 325°F. Whisk agave. olive oil and Seasoning in large bowl until well blended. Add buckwheat, pepitas and cashews, stirring to coat evenly. Line 2 large shallow baking pans with parchment. Spread mixture into an even layer on parchment.
- 2 Bake 15 minutes. Cool completely on pans. Break apart and store in an airtight container up to one week. Serve on salads as a crunchy addition or try as a snack mix.
