Cottage Cheese Flatbread Wrap

Ingredients

  • Cottage Cheese Flatbread
  • 1 full-fat cottage cheese
  • 2 eggs
  • 1/4 teaspoon
  • 1/4 teaspoon
  • 1/4 teaspoon
  • Wrap
  • 4 ounces fresh mozzarella
  • 1/2 cup sliced roasted red pepper
  • 2 cups arugula
  • 1 tablespoon balsamic glaze

INSTRUCTIONS

  • 1 Preheat oven to 350°F degrees. Line baking sheet with parchment paper and spray with no-stick cooking spray.
  • 2 For the Cottage Cheese Flatbread, combine cottage cheese, eggs, garlic powder, parsley, and black pepper in a blender or food processor; cover and blend until smooth. Spread cottage cheese mixture onto prepared baking sheet.
  • 3 Bake for 35 to 40 minutes or until the flatbread is brown on the edges and beginning to brown in the middle. Let cool on baking sheet for 5 to 10 minutes to allow it to set. Slice flatbread in half into two pieces.
  • 4 To assemble Wrap, layer flatbread pieces evenly with mozzarella, roasted red pepper and arugula; drizzle with balsamic glaze.
