Chicken Cordon Bleu-Inspired Sandwich

Ingredients

  • 1/4 cup plus 2 tablespoons mayonnaise, divided
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 3/4 pound boneless chicken breast, (about 2 pieces)
  • 1 package McCormick® Garlic Ranch Crunchy Chicken Seasoning Mix
  • 1/4 cup vegetable oil
  • 1/4 pound deli-sliced ham
  • 4 slices Swiss cheese
  • 2 demi baguettes, split

INSTRUCTIONS

  • 1 In a small bowl whisk together 1/4 cup of the mayo, honey and Dijon mustard. Set aside until ready to use. Split each chicken breast in half lengthwise. Place a piece of parchment paper or plastic wrap over top. Use a mallet to gently pound chicken breast so they are even and about 1/2-inch thick. (Be careful that the meat does not break.)
  • 2 Cut each piece of chicken in half crosswise. Brush on both sides with remaining 2 tablespoons of mayo. Spread the Garlic Ranch Crunchy Chicken Seasoning Mix in a shallow bowl. Working in batches, dredge chicken in the Seasoning Mix, coating evenly on both sides.
  • 3 Heat oil in a large cast iron skillet on medium heat. Add chicken to the pan and cook until crispy, golden brown on both sides and cooked through, about 6 to 8 minutes.
  • 4 Heat broiler on HIGH. Layer crispy chicken onto the baguettes, top with the deli ham followed by slices of Swiss cheese. Place on sheet pan. Broil until the cheese has melted. Brush tops of baguettes with the honey mustard mixture, then close the sandwiches, cut in half and serve.
