Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow squash, coarsely chopped (about 1 1/2 cups)
  • 1 medium zucchini, coarsely chopped (about 1 1/2 cups)
  • 1 cup coarsely chopped red onion
  • 1 cup sliced mushrooms
  • 1 package McCormick® Thick And Zesty Spaghetti Sauce Seasoning Mix
  • 2 cups water
  • 1 can (6 ounces) tomato paste

INSTRUCTIONS

  • 1 Heat oil in large skillet on medium heat. Add vegetables; cook and stir 5 minutes or until tender-crisp.
  • 2 Stir in Sauce Mix, water and tomato paste until well blended.
  • 3 Bring to boil. Reduce heat to low; cover and simmer 10 minutes, stirring occasionally.
  • 4 Serve over pasta or veggie noodles and sprinkle with grated Parmesan cheese, if desired.
