Ingredients
- 1 tablespoon oil
- 1 cup chopped bell pepper
- 1/2 cup chopped onion
- 1 package McCormick® Salt Free Taco Business by Tabitha Brown Seasoning Mix
- 2 cups vegetable stock (vegan-friendly)
- 1 cup water
- 2 cans (15 ounces each) black beans, drained and rinsed
- 1 can (14 1/2 ounces) petite diced tomatoes, undrained
- 1 cup frozen corn
- 1 cup crushed tortilla chips or tortilla strips
INSTRUCTIONS
- 1 Heat oil in large deep saucepan or Dutch oven. Add pepper and onion; cook until veggies are tender crisp. Add Seasoning Mix, stock, water, beans, tomatoes and corn. Bring to boil. Reduce heat to low; simmer 15 minutes.

Ladle into soup bowls. Sprinkle with tortilla chips. Serve with desired toppings.
Serving Suggestion: Serve with assorted toppings, such as chopped avocado, vegan shredded cheese, jalapeño peppers, pico de Gallo or salsa, chopped fresh cilantro and lime wedges.
Tab’s Tip: Substitute 1 pound of plant-based ground meat in place of the black beans. Brown ground plant-based meat along with the veggies in Step 1 until fully cooked. Continue as directed.
