Ingredients

  • 1 tablespoon McCormick® Mixed Pickling Spice
  • 2 cans (15 ounces each) cannellini beans, drained, divided
  • 1/2 pound mild (sweet) Italian sausage, crumbled
  • 1 cup chopped onion
  • 2 carrots, thinly sliced
  • 2 cloves garlic, minced
  • 3 cans (14 1/2 ounces each) chicken broth
  • 1 teaspoon McCormick® Rubbed Sage
  • 1/4 pound greens, such as kale, collards or turnip greens, stems and center ribs discarded, chopped

INSTRUCTIONS

  • 1 Place the pickling spice in the center of piece of cheesecloth or coffee filter. Tie tightly with long piece of string. Mash 1 can of beans in medium bowl until smooth. Set aside.
  • 2 Cook and stir sausage, onion, carrots and garlic in 4-quart saucepot or Dutch oven on medium heat until sausage is cooked and vegetables are softened. Add mashed beans, broth, pickling spice bundle, sage and greens.
  • 3 Bring to boil. Reduce heat to medium-low; cover and cook 20 minutes or until greens are tender. Stir in remaining can of beans. Simmer 5 minutes longer. Remove pickling spice bundle before serving.
