Ingredients
- 2 tablespoons vegetable oil
- 1 package (14 ounces) smoked sausage, sliced
- 1 tablespoon McCormick® Perfect Pinch® Cajun Seasoning
- 1 large onion, thinly sliced
- 1 large red bell pepper, thinly sliced
- 2 medium yellow squash, cut in half lengthwise and sliced
- 1 bunch asparagus, trimmed and cut into 1-inch pieces

INSTRUCTIONS
- 1 Heat oil in a large deep skillet or cast iron skillet on medium heat. Add sausage and cook until browned; about 5 minutes. Remove sausage with a slotted spoon. Set aside.
- 2 Stir in onions, bell pepper and Seasoning; cook 5 minutes until softened.
- 3 Add squash and asparagus; cook and stir 5 minutes until vegetables are tender. Return sausage to skillet; cook and stir 3 minutes longer or until heated through. Serve over cooked rice or pasta and sprinkle with chopped parsley, if desired.
