Ingredients
- 2 tablespoons oil
- 1 large sweet potato, cut into 1/2-inch chunks (about 2 cups)
- 1 cup chopped onion
- 1 cup chopped red bell pepper
- 1 package McCormick® Chili Seasoning Mix
- 1 can (14 1/2 ounces) petite diced tomatoes, undrained
- 1 cup chicken stock
- 2 cups cubed, cooked chicken

INSTRUCTIONS
- 1 Heat oil in large nonstick skillet on medium-high heat. Add potato, onion and bell pepper; cook and stir 5 minutes or until lightly browned.
- 2 Stir in Seasoning Mix, tomatoes and stock. Bring to boil. Reduce heat and add chicken. Cover and simmer 15 minutes, stirring occasionally or until sweet potatoes are tender. Serve with desired toppings.
