Ingredients
- 1 pound fresh Mexican chorizo
- 1 can (15 ounces) tomato sauce
- 1/4 cup water
- 1/4 teaspoon McCormick® Pure Ground Black Pepper
- 1/2 teaspoon McCormick® Chipotle Chili Pepper
- 1/2 teaspoon McCormick® Garlic Powder
- 1/2 teaspoon McCormick® Ground Cumin
- 1/2 teaspoon McCormick® Ground Oregano
- 3 cups shredded Mexican cheese blend, divided
- 8 (8-inch) flour tortillas, warmed
INSTRUCTIONS
- 1 Preheat oven to 350°F. Cook chorizo in large skillet until browned. Drain fat.
- 2 Mix tomato sauce, water and spices in medium bowl. Spread 1/4 cup of the sauce mixture in bottom of 13x9-inch baking dish.
- 3 Spoon 1/4 cup each chorizo and cheese down the center of each warm tortilla. Fold over tortilla sides; place seam-side down in baking dish. Pour remaining sauce over enchiladas. Sprinkle with remaining 1 cup cheese.
- 4 Bake 20 minutes or until sauce is bubbly and cheese is melted. Serve with sour cream, if desired.
