Ingredients
- 1 package McCormick® Original Taco Seasoning Mix
- 2 portobello mushrooms, cut into 1/2-inch slices
- 2 medium bell peppers, cut into 1/2-inch slices
- 1 large yellow onion, cut into 1/2-inch slices
- 1 cup frozen corn
- 2 tablespoons oil
- 8 (8-inch) flour tortillas, warmed

- 1 Preheat oven to 400°F.
- 2 Place mushrooms, bell peppers, onion and corn in large bowl. Add oil and Seasoning Mix; toss until well mixed. Spread veggie mixture in even layer on a large foil- or parchment-lined shallow baking pan sprayed with no stick cooking spray. Roast 25 minutes or until vegetables are tender.
- 3 Spoon veggie mixture into warm tortillas. Serve desired toppings.
