Ingredients
- 1 pound tilapia fillets
- 2 teaspoons McCormick® Perfect Pinch® Lemon Pepper Seasoning
- 1 teaspoon McCormick® Perfect Pinch® Italian Seasoning
- 1 cup chopped seeded plum tomatoes
- 1/4 cup pitted green olives, quartered
- 1/4 cup finely chopped onion
- 1 tablespoon olive oil
- 1 tablespoon white wine
INSTRUCTIONS
- 1 Preheat oven to 400°F. Place fish in single layer in 13x9-inch baking dish sprayed with no stick cooking spray. Mix seasonings in small bowl. Sprinkle fish with 2 teaspoons of the seasoning mixture.
- 2 Mix tomatoes, olives, onion, oil, wine and remaining seasoning mixture in small bowl until well blended. Spoon evenly over fish.
- 3 Bake 18 to 20 minutes or until fish flakes easily with a fork.
TIPS AND TRICKS
Serving Suggestion: Top with crumbled goat or feta cheese and chopped fresh parsley.
