Ingredients
- 1/2 cup all-purpose flour
- 1/3 cup cornmeal
- 2 teaspoons baking powder
- 2 teaspoons McCormick® Garlic Powder
- 2 teaspoons McCormick® Onion Powder
- 2 teaspoons salt
- 1/4 teaspoon McCormick® Pure Ground Black Pepper
- 8 cups corn
- 1 cup sour cream
- 2 eggs
- 4 tablespoons melted butter
- 2 cups shredded Cheddar cheese, divided
- 4 green onions, thinly sliced
INSTRUCTIONS
- 1 Preheat oven to 350°F. Spray 13x9-inch baking dish with no stick cooking spray. Mix flour, cornmeal, baking powder, garlic powder, onion powder, salt and pepper in large bowl. Set aside.
- 2 Place 4 cups of the corn, sour cream, eggs and melted butter in bowl of large food processor or blender container. Cover. Process until smooth. Add mixture to bowl with dry ingredients, whisking to mix well.
- 3 Stir in remaining 4 cups corn, 1 cup of the cheese and green onions, mixing well. Pour into prepared baking dish. Sprinkle evenly with remaining 1 cup cheese.
- 4 Bake 45 to 50 minutes or until casserole is puffy and cheese is golden brown. Allow to cool 10 minutes before serving.
