Ingredients
- 2 pounds Roma tomatoes, cored and chopped
- 1 teaspoon salt
- 1/2 small red onion, finely chopped
- 1/4 cup finely chopped fresh cilantro leaves and stems
- 1 tablespoon fresh lime juice
- 2 teaspoons McCormick® Garlic Powder
- 1/2 teaspoon McCormick® Pure Ground Black Pepper
INSTRUCTIONS
- 1 Place tomatoes in mesh strainer over medium bowl. Sprinkle with salt, tossing gently to mix. Let stand 30 minutes. Meanwhile, mix remaining ingredients in large bowl. Set aside.
- 2 Place 1 1/2 cups of the tomatoes in food processor. Pulse just until smooth. Add pureed tomatoes to bowl with remaining ingredients. Add remaining tomatoes, stirring to mix well.

Serve immediately or store in airtight container in refrigerator up to 1 week.
Test Kitchen Tip: For a sweet or spicy twist, stir in 1 cup chopped fresh mango, peach or pineapple, or 1/4 cup chopped fresh jalapeño.
