Ingredients
- 2 tablespoons vegetable oil
- 1 medium green bell pepper, cut into thin strips
- 1 medium red bell pepper, cut into thin strips
- 1 medium onion, cut into thin strips
- 1 cup medium yellow squash, cut into thin strips
- 1 large ripe tomato, cut into thin wedges
- 1/4 cup water
- 1 package McCormick® Fajita Seasoning Mix
- 8 (6-inch) tortillas, warmed

- 1 Heat oil in large skillet on medium heat. Add bell peppers and onion; cook and stir 5 minutes or until tender-crisp. Add squash, tomatoes, water and Seasoning Mix; cook and stir 3 minutes or until vegetables are tender.
- 2 Spoon vegetable mixture into tortillas. Serve with assorted toppings, if desired.
