INSTRUCTIONS

  • 1 To prep the turkey legs, trim them using a chef’s knife to cut in a circular pattern around the bone, then use kitchen shears to cut through any tendons/tissue to create Lollipops.
  • 2 In a large pot, combine 1 gallon of water, kosher salt, honey, garlic powder, black pepper, cayenne pepper, ground cinnamon and allspice berries. Bring to a boil for 6 to 8 minutes and then place in a large container for brining. Cool slightly, add the ice, and then add the turkey legs.
  • 3 Let turkey legs brine for 24 hours in the refrigerator, or make sure to keep plenty of ice in the container to keep it cold. Also, be sure to have a lid on the container you use.
  • 4 The next day, remove turkey legs from brine, pat them dry and let stand for 45 mins (or until room temp). Season your turkey drum legs with Cajun seasoning (be sure to get under the skin and on the skin). During this time fire up your smoker at 275°F with apple wood chunks.
  • 5 Add the turkey lollipops and smoke until an internal temp of 165°F. Remove from the smoker and let rest for 5 mins.
  • 6 Place on a serving platter and enjoy with family and friends!
