- 4 teaspoons light brown sugar
- 1 tablespoon salt
- 4 teaspoons McCormick® Paprika
- 1 tablespoon McCormick® Pure Ground Black Pepper
- 2 teaspoons McCormick® Ground Mustard
- 1 teaspoon McCormick® Garlic Powder
- 1 teaspoon McCormick® Onion Powder
- 1/4 teaspoon Zatarain's® Cayenne Pepper
- 1 whole beef brisket (about 5 pounds), trimmed of excess fat (leave about 1/4-inch fat cap)
INSTRUCTIONS
- 1 Heat smoker to 225°F according to manufacturer’s instructions. Mix brown sugar, salt, and seasonings in small bowl. Rub brisket all over with seasoning mixture.
- 2 Place brisket on smoker grate, fat-side down. Smoke 4 to 5 hours, or until internal temperature reaches about 160°F.
- 3 Remove brisket from smoker and wrap tightly with heavy-duty aluminum foil. Increase smoker temperature to 275°F.
- 4 Return brisket to smoker and smoke 3 to 4 hours longer or until internal temperature reaches about 205°F. Remove from, smoker and let stand 30 minutes to 1 hour before slicing and serving.
