Ingredients
- 1/4 cup vegetable oil
- 1/4 cup chopped fresh cilantro
- 3 tablespoons lime juice
- 1 tablespoon honey
- 2 teaspoons McCormick® Minced Garlic
- 1 teaspoon McCormick® Sea Salt Grinder
- 1 pound jumbo (21/25 count) shrimp, peeled and deveined
- 1 medium red onion, cut into chunks
- 1 small red bell pepper, cut into chunks
- 1 small zucchini, sliced

INSTRUCTIONS
- 1 Mix oil, cilantro, lime juice, honey, minced garlic and salt in small bowl until well mixed. Place shrimp and vegetables in 2 separate large resealable plastic bags. Pour half of the marinade into each bag; turn to coat well. Refrigerate 15 minutes.
- 2 Remove shrimp and vegetables from marinade. Discard any remaining shrimp marinade. Reserve remaining vegetable marinade. Alternately thread shrimp and vegetables onto skewers.
- 3 Grill skewers over medium heat 6 to 8 minutes or just until shrimp turn pink, turning frequently and basting with reserved vegetable marinade. Serve with rice and lime wedges and sprinkle with chopped cilantro, if desired.
